STUFFED SOLE 
1/3 c. chopped pepper (red or green)
2 tbsp. sliced onion
2 tbsp. butter
1 tbsp. parsley
1/4 tsp. cayenne
1/4 tsp. salt
1/8 tsp. pepper
1 c. corn bread stuffing mix
1 (8 oz.) can corn
2 tbsp. broth or water
4 sole fillets about 1/4 inch thick and 10 inches long

In 1-quart casserole combine pepper, onion, butter, parsley, cayenne, salt and pepper. Microwave on HIGH 2-3 minutes or until tender. Add remaining ingredients (except sole); mix well.

Spread stuffing down center of each fillet. Roll up fillet and secure with toothpicks. Stand on end in pie plate. Microwave at MEDIUM-HIGH 8-10 minutes covered. Let stand before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
