POOR MAN'S STEW 
6 lg. potatoes, peeled and cut into chunks
4 lg. onions, peeled and cut into chunks
6 to 8 carrots, peeled and cut into chunks
2 lg. stalks of celery, cut up
2 lbs. hamburger
2 pkgs. brown gravy mix
2 tsp. Cajun seasoning
2 tsp. salt
1 can tomatoes or quart
1 (No. 303) can green peas
2 c. water

Put potatoes, onions, carrots and celery into large pot, add water. Cook until tender. Add tomatoes and peas. Brown hamburger in a saucepan and add to all the vegetables. Add brown gravy mix to the stew. Put the Cajun seasoning in and the salt. Cover the pot, turn to low heat and simmer 1 hour, stirring occasionally.
