CREOLE CABBAGE 
2 tbsp. butter
1 small head of cabbage, shredded
1 medium onion, sliced
1 medium green bell pepper, seeded and sliced
1 tsp. oregano
1/4 tsp. cayenne pepper
salt and pepper to taste
1 c. tomatoes, diced

Melt the butter in a heavy skillet. Add the cabbage, onion, pepper and seasonings. Cover and cook over low heat until tender, stirring frequently. Add the tomatoes and cook for 10 minutes longer, uncovered.
