HENS WITH HERBS AND BACON 
6 strips bacon
1 tbsp. olive oil
2 Cornish hens
1/2 tsp. thyme
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. poultry seasoning and garlic powder
1 c. heavy cream
1/4 c. dry white wine or water
1/2 c. chopped tomato

In Dutch oven or heavy roasting pan, cook bacon until crisp. Remove, add oil, brown hens over medium heat 10 minutes. Sprinkle thyme and remaining seasoning over hens. Roast at 375 degrees for 45 minutes or until done. Transfer to serving tray, skim fat from pan drippings. Add heavy cream, wine and tomato, simmer 10 minutes, stir in bacon. Serve with hens.
