SNICKERDOODLE DROPS 
1 c. (2 sticks) butter
3/4 c. firmly packed brown sugar
3/4 c. white sugar
2 eggs
1 3/4 c. all-purpose flour
2 c. quick oats
2 tsp. cinnamon, divided
1 tsp. baking soda
1/2 tsp. salt
additional 1 tbsp. sugar

Beat together butter and sugars until light and fluffy. Add eggs; mix well. In separate bowl, mix flour, oats, 1 teaspoon cinnamon, baking soda and salt. Add to butter, sugar and egg mixture; mix well. Drop by rounded teaspoons onto greased cookie sheets. Sprinkle 1 tablespoon sugar and 1 teaspoon cinnamon mixture lightly on each cookie. Bake at 375°F for 8 to 10 minutes.
