2 large flank steaks (any boneless piece of steak will work) 1 large onion 1 pepper 1/2 cup diced mushrooms 1/2 cup of your favorite BBQ sauce Handful of fresh spinach leaves (I use Fresh express spinach for salads) 2 Tbsp. shredded cheddar cheese 2 Tbsp. Worcestershire sauce 8 slices of raw bacon Garlic powder and season salt, to taste Slice steak vertically to make long thin strips. You should be able to get four or five per piece of steak depending on the size you are working with. Set aside. In a bowl, mix BBQ sauce and Worcestershire sauce. Have a basting brush ready to brush the steak slices with. Dice all of the vegetables and combine them with the cheddar cheese and seasonings in a medium sized bowl. Dip the steak strips, one at a time, into the sauce, then lay them onto an ungreased cookie sheet. Slowly spiral them to look like a tornado while filling the gaps with the vegetables. Once you've reached the end of your spiral, take a piece of bacon and wrap it around your steak, overlapping the edges. I like to dab some more sauce on top at this point. Do this to all the steak strips and bake 35 minutes at 350°F. Then broil for an additional minute or two until the bacon is crisp. This tastes wonderful with mashed potatoes and corn. ***NOTE*** I have to put a pan under my stoneware cookie sheet to catch the drippings off the bacon. Otherwise it will drip down and burn at the bottom of your oven causing a huge mess! Makes 4 servings. Submitted by: Jackie Lynch |
