APRICOT DELIGHT SALAD 
1 (11 oz.) pkg. dried apricots
1/2 c. sugar
1 pkg. orange gelatin
2 c. boiling water
1 (8 oz.) pkg. cream cheese
1 (9 oz.) can crushed pineapple, drained well
1/4 c. chopped nuts

Cook apricots, drain and whip at medium speed on electric mixer. Add sugar to hot apricot puree. Mix until sugar is dissolved. Dissolve gelatin in boiling water. Stir in apricot mixture. Pour in 8x8 inch glass baking dish. Chill until firm.

Mix cream cheese and pineapple together and spread on apricot layer. Sprinkle with nuts. Chill until firm. Cut into squares and serve.
