POTATO CASSEROLE | |
8 potatoes, boiled in jackets 2 sticks butter 1/2 onion, chopped 1/2 bell pepper, chopped 2 sticks celery, chopped 8 oz. Velveeta cheese or Cheez Whiz 1 can cream of mushroom soup 1 sm. jar pimentos 6 oz. canned milk Boil 8 potatoes in jackets. Let cool. Peel, then dice. Melt 2 sticks of butter in skillet and saute the onion, bell pepper and the celery. Add 8 ounces of cheese, cream of mushroom soup, pimentos and the milk. Heat until cheese melts. Place potatoes into a large casserole dish and pour cheese mixture over them. Bake 15 minutes at 350 degrees. |
