TURKEY ENCHILADAS | |
1 clove garlic, minced or pressed 1/4 c. chopped onion 1 tbsp. butter 2 c. diced cooked turkey 1 can (4 oz.) diced green chilies or 1/4 c. green peppers 1/2 tsp. dried oregano leaves 2 tbsp. butter 3 tbsp. flour 2 c. chicken broth 1/2 c. sour cream or plain yogurt 8 corn tortillas 1 1/2 c. grated Monterey Jack or favorite cheese 1 can (4 oz.) sliced black olives, drained Saute onion and garlic in the butter. Stir in turkey, chilies and oregano. Heat through. Set aside. Melt butter in saucepan. Stir in flour. Gradually stir in broth. Cook until slightly thick. Add sour cream. Remove from heat. Stir in 1/2 cup broth into turkey mixture. |
