SPINACH QUICHE 
1 lb. fried crisp bacon, crumbled
10 inch unbaked pie shell
2 lg. onions, sliced thin
3 c. grated Swiss cheese
1 1/2 c. cooked spinach
6 beaten eggs
3 c. half and half
Salt and pepper to taste
Grated Parmesan cheese

Sprinkle bacon on bottom of pie shell. Saute onions in bacon drippings and layer over bacon. Sprinkle Swiss cheese over onions. Layer spinach over onions. Mix eggs and half and half (you may use Milnot) and pour over pie. Sprinkle with seasonings and Parmesan cheese. Bake at 450 degrees for 10 minutes. Reduce heat to 300 degrees and bake an additional 45 to 50 minutes. Serves 8.
