CINNAMON ROLLS 
1 pkg. yeast
1/2 c. lukewarm water
1 c. milk
1 c. mashed potatoes
7 c. flour
2/3 c. shortening
1/2 c. sugar
1 1/2 tsp. salt
2 eggs, well beaten

FILLING:

butter
Br own sugar
Cinnamon
Nuts or raisins, if desired

Add lukewarm water to yeast. Stir to dissolve. Scald milk, mix shortening, sugar, salt and mashed potatoes. Blend well, when slightly cooled, add well-beaten eggs and yeast. Mix well, add flour to make a stiff dough. Knead well. Let rise until double in bulk or about 2 hours.

Roll out and spread with butter and brown sugar. Sprinkle cinnamon on top and nuts or raisins, if desired. Roll up and cut. Place on cookie sheet, leaving 2 inch room around each roll for rising, let rise until double in bulk. Bake at 350 degrees until nice and brown. Frost with powdered sugar icing.
