PANCAKES 
1 1/3 c. sifted flour
3 tsp. baking powder
1 egg, slightly beaten
3 tbsp. melted shortening or salad oil
2 tbsp. sugar
3/4 tsp. salt
1 1/4 c. milk

Sift flour, sugar, baking powder, and salt into mixing bowl. In one small bowl, blend together egg, milk, and shortening, mix this well. Add liquid ingredients all at once to flour mixture. Beat with electric beater until smooth. Heat griddle to medium high; grease lightly for first batch only. Pour 1 tablespoon batter per pancake. Bake until pancake is puffed and the surface is full of bubbles and turn them when the bubbles start to break and underside is golden brown. Yield: 20 (2 inch) pancakes.
