FRUIT SLICE COOKIES 
1 c. granulated sugar
1 c. butter, softened
2 eggs
1 1/2 tsp. vanilla
3 c. all-purpose flour
1 tsp. salt
Yellow, green & red food colors
1 1/2 tsp. grated lemon peel
1 1/2 tsp. grated lime peel
1 1/2 tsp. grated orange peel
Yellow, green & orange sugars

Mix sugar, butter, eggs and vanilla. Stir in flour and salt. Divide dough into 4 equal parts. Mix few drops yellow food color and the lemon peel into 1 part. Mix few drops green food color and the lime peel into another part. Mix few drops each red and yellow food color and the orange peel into another part. Leaving remaining part plain. (If necessary, work in food color and peel with hands.) Cover and refrigerate 1 hour.

Shape each part colored dough into roll, about 2" in diameter. Divide plain dough into 3 equal parts; roll each part into rectangle, 6"x4". Wrap rectangle around each roll of colored dough; press together. Roll in matching colored sugar. Wrap and refrigerate at least 4 hours.

Heat oven to 400 degrees. Cut rolls into 1/8" slices; cut each slice into halves. Place about 1" apart on ungreased cookie sheet. Bake 6 to 8 minutes. Immediately remove from cookie sheet. Decorate with icing if desired.
