MOLDED PEACH BAVARIAN 
1 env. unflavored gelatin
Pinch salt
6 tbsp. granulated sugar
1 1/4 c. milk
2 eggs
1 c. heavy cream, beaten stiff
1/2 tsp. almond extract
1/2 tsp. vanilla extract
Fresh peaches, sliced

Combine gelatin, salt, 2 tablespoons sugar with yolks of eggs. When well mixed slowly stir in milk. Cook in double boiler over hot water, stirring constantly until mixture is thick enough to stick to a silver spoon. Remove from heat and refrigerate until slightly thicker than unbeaten egg white. Beat the whites of 2 eggs and slowly add the remaining 4 tablespoons sugar. When very stiff fold into gelatin mixture along with the heavy cream. Pour into mold and chill until firm. Serve with sliced peaches.
