PORK LOIN 
4-5 lb. boneless pork loin
2 tbsp. flour
1 tsp. salt
1/2 tsp. sugar
1 tsp. mustard
1 c. applesauce
1/3 c. brown sugar
1 tsp. vinegar
1/4 tsp. cloves

Remove extra fat from meat. Mix flour, salt, sugar, mustard and pepper. Rub mixture into pork loin. Place loin fat side up in pan. Cook uncovered at 325 to 350 degrees until well done.

During last 1/2 hour, brush generously with applesauce, brown sugar, vinegar and cloves to glaze it. Continue cooking. During last 1/2 hour, bake a few whole apples and serve as an accompaniment.
