PARMESAN CHICKEN STRIPS 
8 skinned, boned chicken breast halves
1/4 c. skim milk
1/4 c. egg substitute
2/3 c. fine, dry breadcrumbs
2/3 c. grated Parmesan cheese
1 1/4 tsp. dried whole basil
3/4 tsp. dried thyme
1/4 tsp. onion powder
1/4 tsp. ground pepper
Vegetable cooking spray

Cut chicken into 4 x 1 inch strips. Combine milk and egg substitute in a small bowl, stir well. Combine bread crumbs and next 5 ingredients, stir well. Dip chicken strips in milk mixture, dredge in bread crumb mixture.

Place chicken strips on baking sheets coated with cooking spray. Bake at 400 degrees for 18 minutes or until lightly browned. 3 1/2 dozen appetizers.
