CORN CHICKS 
3 c. chicken, chopped
1 pkg. unsweetened corn bread mix
1 egg, slightly beaten
1 c. chicken broth
1 tsp. minced garlic
1/4 tsp. crushed red pepper, optional
1 1/2 c. finely chopped onion

In large bowl mix together cornbread mix, egg, chicken broth, garlic and red pepper. Stir until smooth. Add onion and chopped chicken and mix well. Spoon in hot greased muffin tins or corn stick pan and bake at 400 degrees about 15 minutes or until golden brown. Makes 15 muffins or sticks.
