CINNAMON CHICKEN SALAD 
1 to 1 1/2 c. mayonnaise
1/4 c. milk
4 tsp. lime or lemon juice
1/2 tsp. salt
1/2 tsp. cinnamon (or more; to taste)
1/4 c. minced fresh parsley
1 c. chopped walnuts
1/2 c. currants
1 1/2 c. sliced celery
8 c. diced cooked chicken

In a bowl, combine mayonnaise, milk, lime juice, salt, cinnamon, and parsley. Toss with remaining ingredients, adding more mayonnaise or cinnamon to taste. Makes approximately 12 (1/2 cup) servings.
