SPANIKAPITA (GREEN SPINACH PIES) 
2 eggs
1 onion, quartered
1/2 lb. feta cheese
8 oz. cream cheese
10 oz. frozen spinach
2 tsp. chopped parsley
1 tsp. chopped dill
Dash pepper
1 lb. phyllo dough (cut into 2" strips)
Melted butter

Combine eggs, onion and cheese in blender. Add and mix in cream cheese and spinach (which has been squeezed dry and chopped). Add parsley, dill, pepper and refrigerate 1 hour. Lay out strips of phyllo, place filling on one end and fold to opposite side forming a triangle, continue to end of strip. (Like folding a flag!) Place on ungreased shallow pan. Brush with melted butter. Bake at 375 degrees for 20 minutes until golden brown.
