RIO GRANDE ORANGE COOKIES 
2 c. sifted flour
3/4 c. sugar
1 tbsp. fresh ground orange peel (rind)
1/2 tsp. vanilla
1 egg
2 tbsp. milk
1 1/2 tsp. baking powder
2 tbsp. orange juice
1/4 tsp. salt
2/3 c. shortening

In large mixing bowl, cream shortening, sugar, orange peel, egg, orange juice, milk, vanilla and salt. Beat until fluffy. Mix in sifted dry ingredients until blended. Chill for 1/2 hour. Roll out and cut into cookies. Bake at 375 degrees for 6-8 minutes. Remove and cool. Makes 2 dozen.
