EMERALD CHICKEN SALAD | |
3 kiwi fruit 2 med. apples, chopped 1 c. chopped celery 1 c. walnuts 1/2 c. mayonnaise 2 tbsp. lemon juice 1 tbsp. chopped dill (or 1 tsp. dried dill) 1 c. cooked shredded chicken Romaine lettuce leaves Peel and slice kiwi into quarters. Toss kiwi, apples, celery and walnuts. Blend mayonnaise with lemon juice and dill. Fold into kiwi mixture; fold chicken in and spoon onto lettuce leaves. Serves 4. |
