CHICKEN BROCCOLI SALAD 
3 chicken breast halves
1 clove garlic
1 sm. onion, quartered
1 head broccoli

DRESSING:

1/3 c. mayonnaise
1/4 c. plain yogurt
1 clove garlic, pressed
2 tsp. dry mustard
1 sm. red onion, thinly sliced
Romaine lettuce leaves

Place chicken in a saucepan with the garlic and onion. Barely cover with water. Bring to a boil. Reduce heat. Simmer 20 minutes. While chicken cooks cut flowerets from broccoli stalks, split into bite size pieces. Place stalks in small amount of water. Steam 4 minutes. Add flowerets; steam 4 minutes more. Remove chicken from broth. Cut the meat into large chunks.

Combine the mayonnaise, yogurt, garlic and mustard. Gently combine chicken, broccoli and mayonnaise mixture. Surround with Romaine lettuce and onion. Serves 4.
