NANNY HARVEY'S MINCED OYSTERS 
1 qt. oysters
4 eggs
2 c. bread crumbs
1/4 tsp. freshly grated nutmeg
Butter size of walnut
2 tsp. minced onions
Dash of red pepper

Simmer liquid from oysters, onions and nutmeg. For 5 minutes, cut oysters several times. Beat eggs, add to pot. Stir well and add bread crumbs. Add butter and red pepper. While stirring. Cook until creamy but not until oysters begin to shrink. Serve in shell topped with crumbs and butter.
