PORK FAJITAS | |
1 lb. lean pork (tenderloin) 2 cloves garlic minced 1 tsp. oregano 1/2 tsp. cumin 2 tbsp. each orange juice and vinegar Dash hot pepper sauce 1 tbsp. cooking oil 1 med. onion, sliced 1 green pepper, chopped Flour tortillas Green onion tops sliced Shredded lettuce Salsa Shredded cheese Slice pork across grain in 1/8 inch strips. Marinate in garlic, oregano, cumin, salt, orange, hot pepper sauce and vinegar, about 1/2 hour. Heat heavy pan, add oil and pork strips. Stir fry until pork is no longer pink (3 to 5 minutes) Heat tortillas in microwave or oven. Serve with other ingredients as toppings. (You may also stir fry green pepper and on.) |
