PORK FAJITAS 
1 lb. lean pork (tenderloin)
2 cloves garlic minced
1 tsp. oregano
1/2 tsp. cumin
2 tbsp. each orange juice and vinegar
Dash hot pepper sauce
1 tbsp. cooking oil
1 med. onion, sliced
1 green pepper, chopped
Flour tortillas
Green onion tops sliced
Shredded lettuce
Salsa
Shredded cheese

Slice pork across grain in 1/8 inch strips. Marinate in garlic, oregano, cumin, salt, orange, hot pepper sauce and vinegar, about 1/2 hour. Heat heavy pan, add oil and pork strips. Stir fry until pork is no longer pink (3 to 5 minutes) Heat tortillas in microwave or oven. Serve with other ingredients as toppings. (You may also stir fry green pepper and on.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
