MUFFIN PUDDING 
5-6 day old muffins
3 c. milk (3 c. water plus 1 c. powdered milk)
2 eggs
1 tsp. vanilla
1/4 tsp. cinnamon
1/4 tsp. salt
1/4 to 1/2 c. sugar, brown sugar, honey or other sweetener, depends on sweetness of muffins, might not need any at all

Crumble muffins into 7 cup casserole type baking dish. Blend milk, eggs and other ingredients in blender. Pour over muffins, allow to absorb fluid. Bake in microwave uncovered at 3/4 power for 20 minutes until nearly set. Let stand 5 to 10 minutes. Serve with cream, ice cream. Good way to use up odds and ends of sweet rolls also. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
