FANCY OATMEAL COOKIES 
1 c. butter
1 c. sugar
1 c. brown sugar
1 egg
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
Dash of salt
3/4 c. chopped walnuts or pecans
1 1/2 c. oatmeal
1 c. coconut
1 c. raisins

Mix first five ingredients together until fluffy. Add dry ingredients a little at a time. Add coconut, oatmeal and raisins and blend. Add chopped nuts and mix well. Shape into walnut size balls and press to flatten onto cookie sheets.

Bake at 325 degrees for 10 minutes or until just barely turning brown. Cookies will not look done when you remove them from oven. Let cool right on the cookie sheets. Cookies will finish cooking as they cool. Cookies should turn out chewey.
