POTATOES O'BRIEN | |
1 1/2 lbs. raw potatoes Fat for deep frying 2 tbsp. butter 1 med. onion, chopped 1/2 tsp. salt 1 tsp. chopped parsley 1 canned pimento, chopped 1/8 tsp. pepper Set a heavy frying pan on a warm part of the stove, fill it half full of fat and let it slowly heat. Temperature should reach 370 degrees for frying. Wash and peel potatoes and cut into 1/2 inch cubes. Fry in deep fat until golden brown then drain on brown paper towels. Heat the butter in a saucepan and saute the onion in it for 3 minutes. Add the fried potatoes and pimento, salt and pepper then toss together until well mixed. Sprinkle with parsley and serve. |
