WHOLE EARTH COOKIES 
3/4 c. cooking oil
1/4 c. butter
2 c. brown sugar, packed
2 eggs, well beaten
1 tsp. vanilla
2 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. allspice
1 tsp. salt
3 c. oatmeal
1 1/2 c. raisins or currants

Cream shortening and sugar until light. Add eggs and vanilla. Mix dry ingredients together and add. Add oatmeal and plumped raisins (plump by covering with boiling water, stand 1/2 hour, drain). Chill dough. Form into small balls, then flatten on ungreased cookie sheet. Bake 8 to 10 minutes at 350 degrees. Makes 5 to 6 dozen.
