LINZER TARTS 
2 egg yolks
1/2 c. sugar
Grated rind of 1 lemon
1 c. less 2 tbsp. butter, creamed
2 2/3 c. sifted flour

Beat yolks and sugar until light and thick. Beat in the lemon rind and work the mixture into the butter, which should be creamed in a second bowl. Last of all work in the flour and chill the dough for at least 4 hours, preferably overnight. 1 egg beaten with 1 tbsp. water Ground nutmeats Seedless raspberry or apricot jam

Cut into rounds, cut the center out of half the rounds. Bake in 375 F. oven for about 20 minutes. Sprinkle nutmeats on rings before baking. After baking, spread with jam and make sandwiches with rounds and rings.
