BUTTERMILK PANCAKES 
2 c. plain flour
1 tsp. baking soda
1 tsp. salt
2 tbsp. sugar
2 eggs, slightly beaten
2 c. buttermilk
2 tbsp. butter, melted, or bacon fat, or cooking oil

Sift dry ingredients into bowl. Add eggs, buttermilk and melted butter, stirring slightly. (Never mind a few lumps). Bake on a hot, lightly greased griddle or electric fry pan heated to 375 degrees. Make the pancakes your favorite size. Turn pancakes when center springs back to touch or when bubbles on surface break. Makes about 16 (4 inch) pancakes.
