SUPREME DATE & OATMEAL COOKIES 
3/4 c. Crisco
2/3 c. sugar
1 egg
1/4 tsp. salt
1/2 tsp. lemon extract
2 c. flour
1 1/2 c. oatmeal (quick cooking)
3 c. dates, chopped
1 c. water
1/4 c. sugar

Cut up dates and cook in 1 cup water. Add 1/4 cup sugar; stir and cook until thickened; set aside to cool. Now in mixer, beat 3/4 cup Crisco and 2/3 cup sugar until creamy. Add egg, salt and lemon extract and mix well. Sift together flour and 1 teaspoon baking powder and add to the Crisco mixture and stir in the 1 1/2 cup oatmeal and mix well. Press half of the above mixture into 10x13 inch greased baking pan. Spread cooked dates over top of mixture in baking pan. Then sprinkle over dates the remaining oatmeal flour mixture and set aside. Bake in a 350 degree oven for 35 to 40 minutes. When cooled, cut into squares to serve.
