SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1/3 stick butter
1 tsp. salt
1 tsp. vanilla
1 c. sugar
2 eggs
1 c. milk
1 c. brown sugar, firmly packed
1 c. chopped nuts
1 can coconut flakes
1/3 c. self-rising flour
1/3 stick butter, melted

Mix potatoes, 1/3 stick butter, salt, vanilla, sugar, egg and milk together; pour into buttered baking dish. In another bowl mix together the brown sugar, nuts, coconut, flour and melted butter. Then sprinkle mixture on top of souffle. Bake at 350 degrees for 35 minutes.
