CHOCOLATE PIE 
1 c. sugar
2 heaping tbsp. cornstarch or all-purpose flour
2 heaping tbsp. cocoa
pinch of salt
3 large eggs, separated
1 (12 oz.) can evaporated milk
1/2 c. (1 stick) butter
1 tsp. vanilla

Mix first 4 ingredients, add egg yolks, milk and cook over medium heat. Add 1/2 cup boiling water. Stir continuously, add butter and vanilla. Cook until it comes to a full boil. Remove from heat and beat with mixer until creamy. Pour into a baked pie crust. Let cool and add meringue. Place under broiler to brown the top.

Meringue:

3 egg whites
1/4 tsp. cream of tartar
dash of salt
6 tbsp. sugar

Beat egg whites, cream of tartar and salt until soft peaks form. Increase mixer to high speed and add sugar slowly until stiff peaks form.
