PINA COLADA CAKE | |
1 box cake mix (yellow or white) 1 1/2 c. water 2 eggs, beaten 1/2 c. shredded coconut 1 (16 oz.) can cream of coconut (Coco Casa) 1 lg. carton Cool Whip 1 can coconut Grease 9 x 13-inch pan with oil. Dump in pan first 4 ingredients and mix. Mixture will be lumpy and runny. Bake at 350 degrees for 30 minutes. Remove from oven; punch holes in top of hot cake. Pour on cream of coconut. Let cool completely. Mix Cool Whip and coconut, and spread on top of cake. |
