CATHIE'S OATMEAL-RAISIN COOKIES 
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
1 healthy tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
1 cup (2 sticks) butter, softened
1 cup sugar
1 cup light brown sugar, firmly packed
2 large eggs
2 tsp. vanilla extract
3 cups old-fashioned oats (NOT QUICK-COOKING)
1 1/2 cups raisins

Preheat oven to 350°F. Lightly spray cookie sheets. Center oven rack.

In a mixing bowl, combine first 7 dry ingredients; set aside.

In a large mixing bowl cream butter, sugar, brown sugar, eggs and vanilla until light and fluffy.

With hand mixer on low, mix in dry ingredients until no flour is visible. Fold in oats and raisins; stir to incorporate.

Using 2 tablespoons, scoop up a heaping tablespoon of cookie dough, gently press cookie dough between the 2 tablespoons. Slide dough off onto cookie sheet, keeping at least 2-inches between each.

Place cookie sheet on center oven rack and bake for approximately 11 to 13 minutes until golden but still moist.

Remove from oven and let cookies sit on cookie sheet for about 2 more minutes before transferring to wire rack to cool.
