FRIED CABBAGE AND POTATOES -
INDIAN STYLE
 
3 tbsp. oil
1 med. onion, chopped
1 tsp. mustard seeds
4 lg. potatoes, cut in 1/2 inch dice, unpeeled
8 c. coarsely shredded cabbage
1 tsp. fresh ground ginger or less if powdered
1/2 tsp. cumin
1/2 tsp. turmeric
1/2 tsp. cayenne
Juice of 1 lemon

Saute onions with mustard seeds until seeds pop. Fry potatoes in oil mixed with all above ingredients until nearly done, then add cabbage, and add chopped (1) tomato and lemon juice just before serving.

If you are not vegetarian; above recipe is great with about 1/2 pound bacon snipped and fried in pan ahead of time to create bacon grease and flavor.
