BRAN MUFFINS | |
3 c. unprocessed bran 2 tsp. grated orange rind 1 c. orange juice 2 eggs 3 ripe mashed bananas 1/2 c. honey 1 c. plain yogurt 2 c. whole wheat flour 1/2 c. soy flour or cornmeal (stone ground) 2 1/2 tsp. baking soda 1/2 c. raisins 1/2 c. pecans 1 lg. can applesauce Preheat oven to 375 degrees. Heat orange juice until simmering. In large bowl mix orange juice, bran and rind. Let stand. In medium bowl beat eggs and add bananas, honey and yogurt. Beat well. Mix with bran. Sift together the flours and soda and fold into bran mixture. Bake at 375 degrees for 20 minutes. Makes 2 dozen. |
