BUSY DAY MEATBALLS | |
1 lb. ground beef 1/4 c. dry bread crumbs 1/4 c. minced onion 1 egg, slightly beaten 1/4 tsp. salt 1 can tomato soup, cheddar cheese soup or cream soup of your choice 1/2 c. water 2 tbsp. chopped parsley Mix first 5 ingredients; shape into 16 meatballs. In skillet brown meatballs; pour off fat. Stir in soup, water, and parsley, cover and simmer 20 minutes. Stir now and then. Serves 4. Excellent served with white rice. |
