AUCKLAND SPINACH SALAD 
1/3 c. olive oil
1/4 c. white wine vinegar
1 tbsp. Dijon mustard
1 clove garlic, minced
1/2 tsp. dill weed
1/2 tsp. salt
1/4 tsp. pepper
2 qts. torn spinach
3 kiwis
1 tomato, cut into wedges
1 c. red onion slices
1 c. crumbled feta cheese
1 c. croutons

Combine oil, vinegar, mustard, garlic, dill, salt and pepper; mix well. Place spinach in large serving bowl. Peel and slice kiwis and add to the spinach with tomato, red onion and feta cheese. Toss with dressing mixture and top with croutons to serve.
