FRIED POTATOES WITH EGG 
2 cup leftover boiled potatoes
1/4 cup finely chopped onion
2 tbsp. shortening
3 eggs, slightly beaten
salt and pepper to taste

Slice the cold leftover potatoes. Fry with the onions in the hot shortening. When nicely browned, stir in the eggs, add salt and pepper. Fry a few minutes longer until eggs are cooked. Good breakfast or light supper dish. Add a little ham if desired.

Serves 4-6.
