HEARTY RUSSIAN BORSCHT | |
3 lbs. beef (preferred) -or- chicken 3 qts. water 1 lg. onion, sliced 2 medium beets, finely sliced 3-4 ripe tomatoes -or- 1 can tomatoes 1 lg. carrot, diced 1/2 c. diced celery 1 tbsp. parsley, chopped 1 bunch Italian spinach, finely chopped 1 medium potato salt and pepper In a very large pan, slowly boil meat and onion in water for about an hour. Add thinly sliced beets and boil for 1/2 hour. Add tomatoes, carrot, celery and parsley, and boil for 1/2 hour. Add Italian spinach and potato, and salt and pepper to taste. Boil until potato is done and serve. |
