SPINACH ROLL - UPS 
20 lasagna noodles, cooked & drained
1 lb. ricotta cheese
2 pkg. frozen spinach, defrosted & drained
1 egg
1/4 c. Parmesan cheese
8 oz. mozzarella cheese, sliced
1 clove crushed garlic
Salt & pepper to taste
16 oz. jar tomato sauce

Mix together all ingredients except sauce. Spread out noodles and spoon mixture on top of each noodle. Roll up noodles and place in pan that has been layered with tomato sauce. Cover with sauce and a slice of cheese. Bake at 350 degrees for 35-40 minutes.
