SPINACH ROLLED SOLE 
1 pkg. frozen spinach souffle
2 lbs. sole (8 pieces)
Pepper
Nutmeg
Almonds or cashews
1 can cream of mushroom soup (undiluted)
1 tbsp. sherry
1 1/2 c. shredded Swiss cheese

Thaw spinach for 1/2 hour. Cut into 8 pieces. Sprinkle sole with pepper and nutmeg. Place one square of spinach on each piece and roll up. Place seam side down in baking dish.
