BITE SIZE ENCHILADAS 
Round Mexican style tortilla chips
1-1 1/2 lb. ground beef
Tomatoes, large, diced
1 carton tomatoes, sm. salad, sliced
1/2 lg. onion, diced
1/2 lg. green bell pepper, diced
1 tsp. ground cumin
1/2 c. ketchup
1 tsp. mustard
1 tbsp. sugar
Salt to taste
Pepper to taste
1 lb. Monterey Jack or Colby cheese, grated

Brown ground beef; drain. Add remaining ingredients with the exception of small salad tomatoes and cheese. Stir. Simmer approximately 10 minutes.

Place 1 tablespoon of meat on top of each individual chip. Sprinkle with cheese. Place 1 sliced of tomato on top. Serve while hot.
