FRUIT BREAD 
1 (15 oz.) pkg. raisins
2 1/4 c. water
1 (16 oz.) pkg. dates, cut up
4 tbsp. shortening
2 c. sugar
2 eggs
1 tsp. vanilla
5 1/2 c. flour
4 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
1 (20 oz.) can crushed pineapple
16 maraschino cherries

1. In saucepan, boil raisins in water. Drain, save liquid.

2. Cream shortening, sugar, eggs and vanilla.

3. Sift flour with baking soda and salt.

4. Combine raisins, dates and nutmeats in bowl. Dredge with 1 cup flour mixture.

5. Drain pineapple. Mix juice with liquid from raisins. Add to creamed mixture. Stir in raisins, dates and nuts.

6. Add flour. Fold in pineapple and cherries.

7. Spread in 4 greased loaf pans. Bake at 350 degrees for 1 hour. This also makes good muffins and they freeze well.
