SWEET POTATO SOUFFLE 
2 lb. can yams, well drained & mashed
1 c. sugar
1 stick butter, melted
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
3/4 stick butter
1/2 c. brown sugar
2 c. crushed corn flakes
1/2 c. pecan pieces

Mix yams, sugar, spices, vanilla and butter; whip until fluffy. Spoon into greased casserole.

Boil butter and brown sugar for 10 minutes. Remove from heat and add corn flakes and pecans. Spread over yams and bake at 350 degrees for 15 minutes.
