CHINESE CHICKEN SALAD FOR TWENTY | |
8 lb. turkey breast 1 c. canned Hoisin sauce Pure vegetable oil 1 head lettuce, shredded 1/2 lb. Chinese rice noodles 4 stalks celery, chopped 1 bu. green onions, chopped 1/4 c. toasted sesame seeds 1/4 c. toasted sesame seeds 1/4 vegetable oil 1/2 c. soy sauce 1 tsp. maple syrup, pure 3/4 tsp. ground ginger 2 tbsp. lemon juice Brush poultry with hoisin sauce; roast in covered pan for 45 minutes at 350 degrees. Cool to cut in julienne strip. In skillet, heat 1/2 inch oil. Drop small amounts of noodles in pan. Let puff - remove at once with slotted spoon, do not brown. In large bowl combine turkey, lettuce, celery and green onions. Top with sesame seeds. In separate bowl, combine remaining ingredients. Pour dressing over salad and serve at once. |
