CHRIS'S BEAN SOUP | |
1 (1 lb.) pkg. sm. white beans Ham hocks 1 tbsp. sugar Salt & pepper to taste Water, to cover beans & ham 1 lg. onion, cut up 1/4 lb. butter 6 fresh tomatoes, cut up (use canned if necessary) Soak beans several hours or overnight. Cook until tender with ham hock. When done remove ham bone and cut up ham into beans. Add sugar, salt and pepper. Saute onion in butter and add to soup. Add tomatoes and heat well. Simmer about 15 minutes. Serve with lots of fresh hot corn bread and green onions. Some like to add a dash of green pepper sauce. |
