SUMMER SALAD 
1/4 c. olive oil
1/3 c. vinegar
1 lg. cucumber
1 lg. tomato
1 lg. onion
1 lg. bell pepper, cored
Salt and pepper to taste

Thinly slice cucumber, tomato, onion and bell pepper into a bowl. Pour oil and vinegar over vegetables and sprinkle with salt and pepper. Cover tightly and refrigerate overnight for best flavor.
