MINI CHEESE CAKES 
12 vanilla wafers
2 (8 oz.) cream cheese, softened
1/2 c. granulated sugar
1 tsp. vanilla flavor
2 eggs

Line muffin tins with foil liners. Place 1 vanilla wafer in each liner. Mix cream cheese, sugar and flavor on medium speed until well blended. Add eggs. Mix well, pour over wafers, filling 3/4 full. Bake 25 minutes at 325 degrees. Remove from pan when cool. Chill. Top with fruit preserves or nuts and chocolate pieces. Be creative.
